It starts with nixtamalization: a sacred process in which corn is soaked in lime water, rinsed, ground fresh, and cooked with intention. That's how you unlock the nutrients. That's how you get real corn flavor. That's how you respect the ingredient.
Then there's chaya: a leafy green native to the Yucatán, grown by smallholder farmers near Tekax, Mexico, who care about soil health, biodiversity, and their own traditions.
